This recipe is not typical of Persian cuisine but is inspired by it. There is a "Beans and Tomato" salad and there are sauces and mixed rice made with green beans. I have found that the combination of green beans, onion, tomatoes, and dill work really great. Green Beans and Tomato are a great combination, the acidity of the tomato brings out the taste in many different combinations of foods.
You can serve this recipe by itself warm or cold as a salad or appetizer. Otherwise, you can serve it with steamed rice. For a vegetarian style simply omit the chicken as the beans, onions, and tomato combination is delicious by itself. I will also include a green bean and tomato salad later.

Chop the red onion, heat the olive oil and sauté onions until they are soft and transparent. Halfway through also add the chopped garlic.

Add the sliced green beans, I usually get sliced and ready beans but you can also use fresh beans and slice them. And if you don't feel like slicing them just clean and wash as this recipe also works well with whole beans. Let the onions and beans cook and keep stirring. Add the pepper to taste and add the dill to the mixture and stir.

Pour out the onions and beans in a plate or a pot set it aside.

Add a bit more olive oil and add the chickens to the pot sprinkle with turmeric and pepper.

Once the chicken is sauteed on both sides. Add a bit of water and let the chicken cook on slow heat. After 10 minutes add the onions and the green beans and cook for another 10 minutes. Then serve and enjoy!
