The other day I was wondering what can I make that would feel like a full meal and not miss the meat. So I decided on experimenting with three ingredients that I really like and thought would taste good. Guess what I really liked it so I decided to share it with you. Yes, the main three ingredients are in the title. Red onions, small potatoes, and mushrooms.

I use sliced white mushrooms but you can try with a different variety as well. The idea was to have a mixture of flavors and textures. This combination of onions and mushrooms actually almost feels like there is meat or chicken in the dish which is a nice complement to the potatoes. If you had just the mushrooms in the oven with the potatoes you would probably not get the same result.

In fact, this recipe can be used for two different meals. Halfway through the process, you already have a wonderful side dish, but you can continue to create a meal that stands on its own. The food is easy to prepare yes it has steps and takes a bit longer but there is nothing to it. By the way, it is good the first day and you can have it as leftovers, it even tastes good cold.

  1. Slice the red onion and in a pot add a tablespoon of olive oil first on high heat then lower the heat and put the lid on and let the onion cook slowly until it is well cooked, soft, and sweet. Stir occasionally so they don't burn or stick to the pot.
  2. Slice the potatoes in 4 parts each add them to a baking sheet and add some olive oil mix and then add spices, and herbs: ground black pepper, thyme, basil, and if you like some salt.
  3. Spread some bread crumbs this makes it crunchier. Now put in a heated oven about 200°C and bake for 25 minutes. Halfway through I usually using a large spoon turn them over so they cook evenly and get crunchier.
  4. Once the onions are nice and soft, you can add the mushrooms, then add a bit of pepper and a splash of soy sauce. Put the lid on. Let the mushrooms cook slowly. Mushrooms usually release some liquid. Once the mushrooms are almost cooked, remove the lid and reduce the liquid.
  5. Add the mushrooms and onions on top of the potatoes and put it back in the oven for another 10 minutes.
  6. In ten minutes, you have a delicious side dish...!

Continue to make a gratin!

  1. Add the potatoes mushroom and onions to a baking dish. You can oil the dish beforehand so the food does not stick, but it is not critical. In a small bowl mix, the egg with a tablespoon of flour, and then add a cup of cream. Add the mixture on top of the potatoes, mushrooms, and onions.
  2. Sprinkle more breadcrumbs and top with shredded cheese and return to the oven for 20 minutes.
  3. After 20 minutes you have a flavorful dish!
