Turmeric Rice with Peas: The Vibrant, Health-Boosting Recipe You Need
Description
Rice is one of the many versatile foods. There are millions of ways to prepare rice. I created this recipe based on some of the different types of rice I have tasted in my life. Turmeric does not have a strong taste but it has a wonderful color and it is beneficial. Combining Turmeric, vegetable broth, and some mixed spices you get a delicious meal that is easy to make and a joy to eat. You can make this as a main or side dish.

I shred the onion and a clove of garlic in the food processor and with a bit of olive oil until it is soft.

I usually soak the rice in water overnight or at least for 15 minutes before cooking. Add it to the onion when the onion is softer.

Add the mixed spices and turmeric and mix.

Add the vegetable broth and stir on medium to hot heat until it is all absorbed by the rice and evaporated, it takes about 5 to 10 minutes. Before it is completely evaporated add the peas, especially if the peas are frozen which means they contain moisture. Not adding it early could make your rice soggy later.

Once the liquid is all gone, pour the rice into another container. Add some olive oil to the pan and trim the tortilla bread to fit the bottom of the pan.

Fry it a little on one side and then turn it.

Add the rice back and make sure it does not touch the sides of the pot and make a few holes with the end of a spoon. These are chimneys that will allow the steam to escape from the bottom of the rice and therefore make it all nice and fluffy.

Add a few pieces of butter to the top this will melt down in the rice as it steams.

Cover the pot with the lid but put a dishcloth or a paper towel folding it back so you avoid the danger of it catching fire. Turn the heat to low and let it simmer for about 20 minutes. The towel or fabric helps absorb the moisture from the steam without it dripping back into the pot that is the trick to make your rice not soggy and wonderfully fluffy.
